Applesauce Shortbread Cake

WHAT YOU NEED:
2 1/2 cup flour
1 cup sugar
2 1/2 tsp baking powder
grated rind of 1 lemon
dash of salt
1 cup butter, room temperature
2 cups applesauce
FOR THE TOP:
2 Tbsp sugar mixed with
​1 Tbsp Cinnamon
METHOD:
Preheat oven to 375° F (190° C).
Combine flour, 2 cup sugar, baking soda, salt and lemon rind in a mixing bowl. Then work the butter into mixture until it has a crumbling effect with smallish clump. Do not over work the dough.
Grease a medium size square baking pan or round cake pan. Press half the dough evenly into pan.
Spread applesauce over dough, then crumble remaining dough over the applesauce.
Mix sugar and spice blend and sprinkle over top.
Bake for 30 minutes, let cool.
