Applesauce

WHAT YOU NEED:
6 pounds Apples, peeled, cored, and sliced
juice from 1 lemon
1/2 cup sugar or honey
dash of cinnamon or ground rosehips

METHOD:
Fill a large bowl with water and add the lemon juice. 
Peel, core and slice the apples, then place them in the bowl of water. 
Once all the apples have been sliced, remove them from the water and place them in a large, heavy cooking pot.
Add sugar or honey, 
cook on medium until it is simmering.
Reduce the heat, simmering on low, stirring occasionally.

Cook until the apples are soft and falling apart. Time varies depending on the apples used; anywhere from 30 minutes to 1 hour.
Adjust sugar and spice as needed. 

For chunky apple sauce, mash with potato masher until the apples are the desired size.
For smooth apple sauce, puree the apples in a food processor.

Divide into 16oz containers and freeze.
