Roast Asparagus

WHAT YOU NEED:
asparagus
olive oil
salt
METHOD:
Preheat oven to 400° F.
Trim bottoms off asparagus.
​Lightly coat with olive oil.

Place the asparagus on a baking sheet and lightly sprinkle with salt.
Bake for 10-15 minutes
 or until the asparagus is just beginning to soften. It is very easy to overcook asparagus, so keep a close eye on it.
Asparagus, which is still a little crunchy, will have a fresher flavor. 
 
Use any leftover asparagus in vegetable quiche or frittatas.
