Pumpkin Spice Bars
METHOD:
CAKE:
Preheat the oven to 350° F (175° C).
Grease a 13 x 10-inch baking pan.
Mix the eggs, sugar, oil, and pumpkin in a large bowl until light and fluffy.
In a separate bowl, stir together the flour, baking soda, baking powder, spice blend, and salt. Add the dry ingredients to the pumpkin mixture and mix thoroughly.
Spread the batter into the baking pan.
Bake for 30 minutes. Or until a toothpick comes out clean.
Let cool completely before frosting.
FROSTING:
Mix the cream cheese and butter in a medium bowl using an electric mixer. Add the sugar and mix at low speed until it is combined. Stir in the vanilla and mix again. Spread the frosting on the cooled pumpkin bars.
Cut into squares and serve.
