Pumpkin Pancakes

WHAT YOU NEED:
1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 Tbsp butter
2 Tbsp vinegar
2 cups all-purpose flour
3 Tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
2 tsp pumpkin spice
1/2 tsp salt
METHOD:
Mix the milk, pumpkin, egg, oil, and vinegar in a bowl.
Combine the flour, brown sugar, baking powder, baking soda, spice blend, and salt in a separate bowl.
Stir the flour mixture into the pumpkin mixture just enough to combine.
Heat a lightly oiled griddle or frying pan to medium-high heat.
Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
Brown on both sides and serve hot. 

​Serve with apple sauce, walnuts, sour cream, and/or maple syrup.
