​Molasses Cinnamon Cookies

WHAT YOU NEED:
2 cups flour
2 tsp baking soda
1 Tbsp cinnamon
½ tsp salt
1 large egg
½ cup butter (1 stick)
⅓ cup sugar
⅓ cup blackstrap molasses
¼ cup (packed) dark brown sugar
raw sugar (for rolling)
METHOD:
preheat to 375°
Mix flour, baking soda, cinnamon, and salt in a medium baking bowl. Melt butter, and in a larger bowl, whisk egg, butter, sugar, molasses, and brown sugar. Mix in dry ingredients, stirring gently just until combined. Do not overmix.
Place dough in the fridge and chill for about 20 minutes.
Place raw sugar in a shallow bowl. Roll dough into Tbsp-sized balls and roll in sugar to coat. Place on a greased baking sheet or baking sheet with parchment paper about 2” apart. The recipe fills about two baking sheets.
Place both baking sheets in the oven, evenly spaced. Bake cookies, rotating baking sheets halfway through, for 8-10 minutes, or until cookies are puffed, cracked, and just set around edges; do not overbake. Transfer to cooling rack.
