Molasses Cinnamon Cookies

Picture
What you need:
2 cups flour
2 tsp baking soda
1 Tbsp Soul Warming Cinnamon Blend
½ tsp salt
1 large egg
½ cup butter (1 stick)
⅓ cup sugar
⅓ cup blackstrap molasses
¼ cup (packed) dark brown sugar
raw sugar (for rolling)
Method:
preheat to 375°
In a medium baking bowl, mix flour, baking soda, spice blend, and salt. Melt butter, and in larger bowl, whisk egg, butter, sugar, molasses, and brown sugar. Mix in dry ingredients, stir gently just until combined. Do not over mix.
Place dough in fridge and chill for about 20 minutes.
Place raw sugar in a shallow bowl. Roll dough into Tbsp size balls and roll in sugar to coat. Place on greased baking sheet or baking sheet with parchment paper about 2” apart. Recipe fills about two baking sheets.
Place both baking sheets in oven, evenly spaced. Bake cookies, rotating baking sheets halfway through, 8-10 minutes, or until cookies are puffed, cracked, and just set around edges, do not over bake. Transfer to cooling rack.
