Mashed Roots
METHOD:
Peel and dice the vegetables.
In a large pot, cover with water and boil until tender.
Strain the water from the vegetables and return the vegetables to the pot.
Melt the butter.
Pour over potatoes and mash.
Add the milk or broth a little at a time, mashing in between, until you get the desired consistency.
Salt to taste. Add additional ranch mix if needed.
Too much liquid will make the mash runny. But this can be fixed by adding a little bit of instant mashed potato flakes.
*Any combination of root vegetables can be used, although these days, most recipes call for potatoes as a main ingredient.
Instead of yams or parsnip, you can use rutabaga, kohlrabi, turnips, celery root, or carrots.
You can also use other vegetables like cauliflower or squash.
