​Lentil Soup with Lemon

WHAT YOU NEED:
3 Tbsp olive oil, more for drizzling
1 large onion, chopped
3 garlic cloves, minced
1-4 tsp of taco spice
1 Tbsp tomato paste
6 cups broth
1 cup red lentils
2 large carrots, peeled and diced
Juice of 1 lemon
Salt to taste
 

Method:
In a large pot, heat 3 tablespoons oil over high heat until hot and shimmering. Add onion and garlic, and sauté until golden, about 4 minutes.
Stir in tomato paste and some taco spice, and sauté for 2 minutes longer.
Add broth, some salt, lentils and carrot. Bring to a simmer, then turn heat to medium-low. Simmer until lentils are soft, about 40 minutes. Add lemon juice to taste. Add salt and more taco spice to taste.

Serve warm with a dollop of sour cream on top and sprinkled parsley or cilantro.
