​Lemon Vanilla Dutch Baby

WHAT YOU NEED:
PANCAKE:

3 eggs
1/2 cup whole milk
1/2 cup flour
2 tsp vanilla extract
1/4 cup sugar
2 Tbsp butter
1 tsp lemon zest

GLAZE:
1 tsp lemon juice
1 tsp milk
1 cup powdered sugar

TOP:
Seasonal Fruit or quick Berry Jam
METHOD:
Preheat oven to 450 F
In a large bowl, mix eggs and milk.
Add flour, sugar, lemon zest, and vanilla and mix until smooth.  Mix quickly to create a froth, if possible.
Place a cast iron skillet in the oven with the butter. When butter is melted, remove from oven and pour batter into skillet.
Bake for about 15 minutes until fluffy, golden and has solidified.

Whisk together lemon juice, milk, and powdered sugar in a small bowl​. Drizzle the glaze over the hot Dutch baby and serve.
Serve with bananas and fresh berries or quick Berry Jam.
