Faerie Rounds

WHAT YOU NEED:
1/2 cup sweet white wine like Riesling
2 Tbsp sugar
1 egg
2/3 cup flour
1 tsp ground rosehip, nutmeg, or cardamom
1/8 tsp salt
Oil for frying
Powdered sugar
1 cup thin honey for dipping ( if your honey is too thick you can use something like orange juice to thin it out)
METHOD:
In a medium bowl, beat wine & egg.
In a separate bowl, combine the flour, sugar, ½ tsp spice and salt.
Add flour mixture to egg mixture, stir until blended.
Let stand 30 minutes.
Meanwhile, combine honey with remaining 1/2 tsp spice blend.
In a medium Sautee pan, add ½ inch of oil. Heat until hot, but not smoking.
Add 1Tbsp size balls of batter to the oil, one or two at a time. Fry until golden brown.
Remove from oil and place on paper towels to drain excess oil.
Once cool, place on platter and sprinkle with powdered sugar
Serve with spiced honey as a dipping sauce.
 
Recipe makes about 18 “cakes”
