Caramelized Pepper Brie

Picture
WHAT YOU NEED:
1 wedge brie
½ cup pecans
2 Tbsp butter
1 Tbsp sugar
¼ tsp salt
½ black pepper
1/8 tsp cayenne pepper
METHOD:
Preheat oven to 200° F (95° C). Chop the pecans. In a medium sauce pan, heat the pecans, butter, sugar, salt, and peppers. Once it begins to bubble, reduce the heat and cook until sugar is dissolved. Heat Brie in the oven until soft and warm. Keep a close eye on it, it melts easily. Pour pecan mixture over warm cheese, keep warm.

In a sauce pan, heat 2 Tbsp butter, 2 Tbsp sugar, and 1-2 Tbsp water until it bubbles and the sugar dissolves. Pour over warm cheese.

Serve warm with peppered crackers or a sliced baguette.
