​Grilled Pineapple and Chicken

WHAT YOU NEED: 
FOR THE GRILL:
10 chicken thighs
1 pineapple, thickly sliced
White onion, thickly sliced
MARINADE:
10 oz soy sauce
10 oz pineapple juice
1 tsp ground fresh ginger
2 clove minced garlic
1/2 cup brown sugar
1/4 cup vinegar
METHOD:
Mix ingredients for marinade, add chicken, and place in refrigerator overnight. Before grilling, remove
the chicken from the marinade and pour the marinade into a saucepan. Cook, adding additional pineapple juice to expand the amount of sauce if desired. Simmer on low until the marinade thickens.
While cooking, Place chicken, pineapple, and onion slices on grill and brush with thickened marinade​.
