​Grilled Pineapple and Chicken

​​What you need:
Marinade:
10 oz soy sauce
10 oz pineapple juice
1 tsp ground fresh ginger
2 clove minced garlic
1/2 cup brown sugar
1/4 cup vinegar
 
For the grill:
10 chicken thighs
1 pineapple, thickly sliced
White onion, thickly sliced
Method:
Mix ingredients for marinade, add chicken and place in refrigerator overnight. Before grilling, remove chicken from marinade and pour marinade into a saucepan. Cook, adding additional pineapple juice to expand amount of sauce if desired. Simmer on low until marinade thickens.
Place chicken, pineapple slices, and onion slices on grill and brush with thickened marinade while cooking.
