Vegetable Scramble
This can be made with any vegetables of choice, just cook vegetables before adding eggs and cheese.
What you need: 4 eggs 1 Tbsp butter ½ cup diced cheese (pepper Jack or goat cheese is excellent) 2 green onions, sliced 1 ½ cup shiitake mushrooms, diced 6 large chard leaves 1 tsp Summer Herb Garden Savory dash of salt |
Method:
In a medium bowl, mix eggs, cheese, Summer Herb Garden Savory, and salt. Set aside.
In a medium size sauté pan, melt butter, then add mushrooms. Meanwhile strip stems from chard and cut into pieces.
Once the mushrooms are cooked, add chard and green onions. Cook on low until the chard has wilted.
Add egg mixture, and cook on medium-low heat until cheese melts and eggs are done.
