Black Bean Salsa
What you need:
2 cans black beans 1/2 red onion 1 ear of corn 1 tomato 1 jalapeño 1 clove garlic cilantro Dressing: olive oil lemon or lime juice Salt 1-2 minced clove of garlic Homestyle Taco Spice to taste |
Method:
The corn can be added to the salad cooked or raw. For cooked corn, boil the ear of corn for about 2-5 minutes, remove from water, and let cool. Cut the corn kernels from the husk with a knife. Place the corn in a mixing bowl. Drain and rinse the black beans, and add to bowl. Dice the onion and the tomato. Seed and finely dice the jalapeno. Mince the garlic and chop the cilantro. All the ingredients to the mixing bowl.
In a separate bowl mix the dressing to taste. Add the desired amount of dressing to the vegetables. Cover and refrigerate until ready to serve.
Can also be made with avocado instead of tomato.
