White Bean Chicken Chili
This chili makes an excellent camping meal. See below for campfire version.
What you need:
4-5 boneless skinless chicken thighs 2 cans (15 ounces each) white beans 1 bell pepper, seeded and diced 1 onion, chopped 1-2 cup fresh or frozen corn 1-2 jalapeno pepper, seeded and chopped 4 garlic cloves, minced 2-5 tsp Homestyle Taco Mix Salt to taste 2 Tbsp olive oil |
Method:
Stove Top:
In a heavy cooking pot, heat oil and sauté onion until tender. Add garlic, and 1 Tbsp Homestyle Taco Mix . (add more later if needed)
Stir and cook for two minutes.
Add the remainder of the ingredients, including the whole chicken thighs.
Cover and simmer on low until the chicken is fully cooked and is easy to shred.
Salt and spice to taste.
If needed, add a little chicken broth while cooking if the chili is looking a little dry.
Campfire Dutch Oven:
Start a medium size pile of coals.
Meanwhile prep ingredients.
Once coals are ready, pour oil into Dutch, then place the chicken thighs in pot and sprinkle Homestyle Taco Mix over chicken.
Layer all other ingredients on top.
Put the lid on Dutch oven, and place pot on 10 coals.
Place 6 coals on top of pot.
Check pot occasional to see if heat needs adjusting. This is done by adding or removing coals.
Simmer until cooked chicken is coming apart.
Serve with: sliced avocado, chopped cilantro, and sour cream.
