Vegetable Hash

Great served with a fried egg and pickled red beets.

What you need:
1 lb small new potatoes
1 onion
2 carrots
1 turnip
1 bell pepper
2-3 cloves garlic
3 Tbsp butter
1 Tbsp olive oil
2 tsp Hint of Spicy Paprika Blend
salt
Method:
In a large skillet, heat butter and olive oil. Add 2 tsp Hint of Spicy Paprika Blend and a dash of salt. Stir until spice is well mixed with the butter and oil. Mince garlic and add, stir until is blended with spice. 
Dice potatoes and onion and add them to the skillet. Peel and dice carrots and turnip and add them to the skillet. Dice bell pepper and add it to the skillet. 
Sauté the vegetables on medium heat. Keep a lid on while cooking for about 10 minutes to help steam the potatoes, then remove. Add additional paprika blend or salt if needed. Stir occasionally to prevent potatoes from sticking to the bottom of the pan. Add additional oil if needed. 

Almost anything can be added to this dish, it’s a great way to use up leftovers. Add these at the end, so they are warmed but not cooked further. 
Great vegetable additions: bell peppers, mushrooms, sweet potato, broccoli, asparagus, brussels sprouts
