Spicey Shrimp and Sausage Foil Packets
What you need:
1 lb potatoes 1 1/2 lb. large shrimp 3 ears corn 2 andouille or Cajun sausages 4 Tbsp butter 2 Tbsp Chili Lime Grill Spice Salt 1 lemon Parsley (optional) |
Method:
This can be cooked in the oven or on a grill.
Start coals about 20 minutes before hand or preheat oven to 400 F.
Meanwhile, wash and cut potatoes into large cubes. Cut corn into 3-inch pieces. Slice sausage. If needed, devein and peel the shrimp, leaving the tails on.
Place all the ingredients in a large bowl, squeeze lemon juice over ingredients, and toss to coat. Sprinkle the Chili Lime Grill Spice and a little salt over ingredients. Toss to coat. Cut 4, 12-inch sheets of foil and divide ingredients evenly between sheets. Sprinkle parsley over each food packet, then place a Tbsp of butter on top of each packet. Bring the corners of the foil to center and wrap the edges to fully seal the packet.
Place on grill and cook for 15-20 minutes. Or place in oven and cook for 20-25 minutes. packets are done when the shrimp is fully cooked and the potatoes are soft.
Method for camping: Unless you are planning to cook this dish on night one, it is best to buy the shrimp frozen and let them defrost in the cooler. This also helps keep the temp in the cooler down. Place packets on fire grate over coals. Cook for 15-20 minutes.
