Rosehip Snickerdoodles
Use the Sweet Summer Rosehip Sprinkle for a lighter rosier flavor or the Summer Essence Rosehip Spice if you want to increase the rosehip flavor.
What you need: ½ cup butter, at room temperature ½ cup vegetable oil ½ cups granulated sugar ½ cup powdered sugar 1 large egg 2 1/8 cups flour ½ tsp baking soda ½ tsp cream of tartar ¼ tsp salt Coating: 1/4 cup Sweet Summer Rosehip Sprinkle or 1/4 cup granulated sugar + 1 Tbsp Summer Essence Rosehip Spice |
Method:
Preheat oven to 375° F (190° C).
In a medium bowl, with an electric mixer on medium speed, beat the butter, oil, granulated sugar, and the powdered sugar until very smooth.
Beat in the egg until well blended, scraping down sides of bowl as needed.
In another bowl, mix flour, baking soda, cream of tartar, and salt. Stir or beat into butter mixture until well blended.
In a small bowl, add rosehip sprinkle or mix sugar and rosehip spice, whichever you are using.
Shape dough into 1-inch balls, and then roll each in sugar mix to coat.
Place balls 3 to 4 inches apart on buttered baking sheets. Press the balls down lightly. Bake until the cookies are lightly browned, 12 to 15 minutes.
Using a spatula, transfer cookies to racks to cool completely.
