Rosehip Applesauce
Having homemade applesauce to take out of the freezer adds a lovely sense of summer sunlight to any winter meal,
and the Summer Essence Rosehip Spice really enhances the effect.

What you need:
6 pounds Apples, peeled, cored, and sliced juice from 1 lemon 1/2 cup sugar 2-4 tsp Summer Essence Rosehip Spice |
Method:
Fill a large bowl with water and add the lemon juice.
Peel, core and slice the apples, then place them in the bowl of water.
Once all the apples have been sliced, remove them from the water and place them in a large, heavy cooking pot.
Add sugar and Summer Essence Rosehip Spice, cook on medium until it is simmering.
Reduce the heat, simmering on low, stirring occasionally.
Cook until the apples are soft and falling apart. Time varies depending on the apples used; anywhere from 30 minutes to 1 hour.
Adjust sugar and rosehip spice as needed.
For chunky apple sauce, mash with potato masher until the apples are the desired size.
For smooth apple sauce, puree the apples in a food processor.
We usually divide the apple sauce into 16 oz containers, and freeze all but 1.
