Homestyle Burritos
What you need: 1 ½ cup cooked brown rice 1 ½ cup black beans, (15 oz can) 1 ½ cup frozen corn, defrosted 1 onion 1-2 can diced chili peppers or 2-3 banana peppers 1-3 Tbsp Homestyle Taco Mix |
Method:
Dice the onion. Peel and dice the banana peppers of using.
Heat some oil in a heavy pot (we use avocado oil), then add onion and banana peppers, sauté until translucent. Add Homestyle Taco Mix, sauté for 1 minute to open the flavors of the spice blend. Add the rest of the ingredients and heat until the mixture is warm.
Keeps well in fridge over the course of a week.
Serve wrapped in a burrito size tortilla with shredded cheese, shredded lettuce, tomatoes, salsa, sour cream and avocado.
