Greek Salad

WHAT YOU NEED:
3 large ripe tomatoes
2 small cucumbers
1 small red onion
1 cup crumbled feta cheese
1/2 cup pitted Kalamata olives

DRESSING:
6 Tbsp extra-virgin olive oil
2 tsp fresh oregano
juice from ½ lemon
salt 
METHOD:
Dice the tomatoes, cucumbers, and red onion. Combine the tomatoes, cucumber, onion, feta cheese, and olives in a mixing bowl. Chop the oregano. Mix the ingredients for the dressing in a small blender, or place in a jar and shake. Add dressing to the salad.
 
This salad is better if it gets to sit in the refrigerator for a few hours before serving.
Good as a side dish or served on a bed of butter leaf lettuce.
