Chicken Parmesan
You can either use regular size chicken breasts and slice them horizontally to make thin cutlets,
or purchase pre-sliced cutlets.

Method:
Heat the oven to 350° F (180° C). Pour a little bit of the marinara sauce into a 9 x 13-inch baking dish, spread to coat bottom, set aside.
Whisk together the egg and milk in a bowl. Put breadcrumbs, flour, ¼ cup parmesan cheese, and, herb blend in a wide, shallow bowl.
Heat the oil and butter in a heavy skillet. Dip the chicken breasts in egg mixture and then place the chicken in breadcrumbs, press both sides in breadcrumbs to coat thoroughly.
Sautee the breaded chicken on medium high heat until breadcrumbs are brown and crisp, then place the chicken in the prepared baking dish. Slice pieces of mozzarella cheese and cover each chicken breast. Pour the remainder of marinara sauce over the chicken. Sprinkle with Parmesan cheese.
Bake for 20-30 minutes, or until the chicken is done.
Serve with pasta or garlic bread and a tossed green salad.
