Chard Cheese Casserole
Also good with sauteed mushrooms
What you need: 6 cup chard 1 onion, diced 2 cup cottage cheese ¾ cup Swiss cheese 4 eggs olive oil ½ tsp salt bread crumbs parmesan cheese Hint of Spicey Paprika Blend |
Method:
Preheat oven to 350 degrees. Grease a medium size casserole pan. Heat the olive oil in a skillet. Add the chard with a dash of water. Cook until wilted. Remove from pan and set aside. Dice the onion. Add a little more olive oil to the skillet, then sauté the onion until translucent. Grate the cheese.
In a medium bowl, mix together the cottage cheese, Swiss cheese, eggs, and salt. In a separate bowl, mix the onions and chard. Mix the egg and cheese mixture with the chard. Pour the mixture into the casserole pan. Sprinkle the bread crumbs, parmesan cheese and Hint of Spicey Paprika Blend on top. Bake for about 30 minutes, or until the eggs have set.
Let cool a few minutes before serving.
