Black Bean Sweet Potato Taco
What you need: 1 15oz can black beans 1 jalapeno ½ yellow onion 1-2 cloves garlic 1 Tbsp oil salt 1-3 tsp Homestyle Taco Mix 1 orange sweet potato 1 lime salad green avocado taco shells or tortillas |
Method:
In a sauté pan, heat oil (I like to use avocado oil). Finely dice the onion and jalapeno. Add to heated oil. Sauté until onion is translucent. Mince garlic and add to pan. Add beans and liquid (do not rinse). Simmer on low until the liquid thickens. Add salt and Homestyle Taco Mix to taste.
Peel and cube sweet potato. Place in small pot and cover with water. Boil until the sweet potato is just turning soft. Sweet potatoes go from hard to mushy very fast, so keep an eye on it.
Making the Taco: If you are using tortillas and have a gas stove, cook them directly on the flame on low. A few seconds on each side, until the air pockets puff up. If not, you can heat them in a pan as well.
Add black beans, then sweet potato to taco shell or tortilla. Then squeeze lime juice over the sweet potato. Add dices avocado
Topping:
Thinly sliced greens (I like to use a mix of baby greens mix and a spicy micro green of some kind). Good old fashion iceberg is also good.
Chopped cilantro
shredded pepper jack or queso fresco.
