Apple Carrot Muffins
What you need: 3 eggs 1/2 cup sugar 1/2 cup vegetable oil 1/2 tsp vanilla 2 cup grated apple 1 cup grated carrot 2 cup flour 2 tsp baking soda 1/4 tsp. salt 2 tsp Soul Warming Cinnamon Blend |
Method:
Preheat the oven to 375 F (190 C).
Lightly grease a 12-muffin tin or line it with paper liner cups. Set aside.
In a mixing bowl, mix the eggs, sugar, vanilla and oil until well blended with an electric mixer or whisk.
Grate the apples and the carrots. Stir in apples and carrots into egg mixture.
In a separate bowl, sift the flours, baking soda, salt and Soul Warming Cinnamon Blend.
Mix the dry ingredients with the apple mixture until just combined. Lumpy is fine.
Spoon the batter into the muffin tin and bake for 25 minutes or until a toothpick comes out clean from the center of the muffins.
