​Mexican Style Grilled Corn

WHAT YOU NEED:
6 – 8 ears corn
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup cilantro
1 clove garlic
1/4 tsp chili powder or Mexican paprika
Zest from 1 lime
Juice from 1 lime
1/2 cup cotija cheese
 
Lime wedges
METHOD:
Heat a gas grill or coals to a high temperature, about 400°F.
 
Sauce:

In a small bowl, Whisk together sour cream, mayonnaise, and lime juice. Finely mince cilantro and garlic, and stir into the mixture. Stir in chili powder and lime zest.
 Adjust ingredients to taste.
 
Grilled Corn:
Remove the husks and place the corn directly onto the grill grates. Grill each side for about 3 minutes or until the kernels look a little charred.   
Remove the corn from the grill and brush or spoon the mixture onto each ear. Crumble cotija cheese onto the corn. Serve with lime wedges.
